How about rendering some really heavy rendering with Blender
(http://www.blender.nl/) that would definately show the power of the
machine (and blender runs on Alpha), and if the images are very shiny
then it should make people stop and look... The Alpha is well known for
its number-crunching ability, and there's a lot of number crunching in
rendering 3D graphics.

You'll also need some music to catch people's attention so XMMS
(http://www.xmms.org/), with a nice skin, is a must.

Everyone loves fractals, they look good, they usually take a long time to
draw (so there's a chance to impress people). So why not have kmandel
(http://www.privat.kkf.net/~juergen.hochwald/linux/kmandel/e_index.html)
on the demo machines.

You could also include a movie player and show off with some movies
playing while running other apps. You could use the mpg123 plugin for
xmms for that purpose.

And may I suggest running KDE2.0.1 (this is not meant as a KDE/Gnome
flamewar, Gnome is also nice!) on the demo machines. It has a very
attractive look, Windows users can find their way around it and it is
stable. This would also give you the oppertunity to run an animated
background such as Kmatrix (http://member.internettrash.com/kmatrix/).
